Manual harvest between the 27th of September
and 3rd of October. Spontaneous fermentation,
no yeast addition.
21 Days of maceration
Ageing 18 months 55 percent in 25 and 40 hl wood casks rest in tonneaux and used barrels.
Bottled beginning of August 2018.
21600 0.75lt bottles and 149 magnum
Alcohol 14%, total acidity 5.6g/l pH 3.51
Extract 28.3 g/l
