Pack of 500 gr.
Inspired by a Sicilian cheese our Zaffero is made with saffron (grown by a friend of mine near Florence) and green peppercorns.
It has a rectangular shape, is very yellow and weighs between 8 and 9 kilos. When it is ready for sale we portion it and wrap in 500gr squares vacuum packed.

Curds broken like a hazelnut and dried for over 30 minutes
Added saffron and green peppercorns
Poured into big forms, and steamed
Salted by hand with dry salt
Matured in cella at 12°c for 2 months
Cheese sold in 500gr slices .
