3rd and 4th of October Sangiovese
and 10th of October Cabernet Sauvignon.
Fermentation in stainless steel tanks
and 1 ton bins. Maceration 30 days.
Malolactic fermentation in wood
December 2014.
Ageing in barriques for 23 months,
20% new oak. Bottled December 2016
Production: 4500 0.75lt.bottles ,
150 1.5Lt. bottles and 30 3lt. bottles
Alc. 14.% Total Acidity 5.3 g/l pH 3.55
Extract 28g/l.
