Varieties: Trebbiano 80%, Malvasia 20%

Since the introduction of the DOC “Vin Santo del Chianti” in 1995 this wine is not allowed to be labelled with the denomination “Vin Santo” as the alcohol level must not be inferior to 13% by vol.

Manual harvest on September 27/28, 1999
Grape clusters hanged and dried for 5 months until February 2000
Fermentation in small oak barrels (caratelli), capacity 100 lt.
Maturation in barrels for 8 years.
Bottled in November 2008
2000 bottles of 0.375 lt produced.
Alc. 11 % Total Acidity 8 g/l, Residual sugar 315 g/l, pH 3.51 g/l
