Fermentation in stainless-steel tanks

No malolactic fermentation
On lees until end of February 2017.
Bottled beginning March 2017.
8333 Bottles produced.
Alc. 12% Total Acidity 5.7 g/l pH 3.2
Residual sugars 1g/l
