Sauvignon Blanc 12%
Trebbiano and Malvasia 10%
Manual harvest for Chardonnay
Semillon and Sauvignon Blanc between
29 August and 5 September.
Petit Manseng and Trebbiano on the
9th of September
Whole grape pressed.
Temperature controlled fermentation at 15°C,
20 to 25 days separated for variety. No malolactic fermentation.
On lees until end of February 2017 Bottled beginning of March 2017
30400 Bottles produced Alc.13 %, Total Acidity 5.9, g/l pH 3.3 Residual sugars 1g/l
